Mi sto proprio dando alle zucchine eh? Che volete in estate amo mangiarle cotte, crude, saltate… Davvero in tutti i modi! Infatti mi sono sbizzarrita davvero in questi ultimi tempi.Ma questo primo piatto ve lo devo proprio raccontare perchè è stata una scoperta davvero positiva.
Torno a parlare di menta questa volta dopo la glaciale ho usato la piperita, meno forte ma ugualmente aromatica forse preferibile per le peparazioni calde. Quanto sta bene la menta con le zucchine? Ho scoperto questo fantastico connubio e ora non lo mollo più. Mi piace troppo! Ancora più azzeccato se le zucchine sono usate in versione croccante, insomma fritte, la menta rinfresca la bocca e il palato ad ogni boccone.
FARFALLE CON ZUCCHINE CROCCANTI ALLA MENTA, PACHINO E RICOTTA
200 gr di farfalle
2 zucchine
8 pachino
ricotta q.b. (2 cucchiai circa)
olio evo
sale
farina
olio d’arachidi
foglie di menta
parmigiano reggiano grattuggiato
Tagliare le zucchine a rondelle infarinarle e buttarle nell’olio caldo per farle dorare. Scolarle belle croccanti e salarle solo alla fine, per lasciarle croccantissime.
Tagliare i pachino in una padella ampia con l’olio evo e farli appassire e scioglierci in mezzo la ricotta. Aggiungere la menta tagliata grossolanamente a mano e salare.
Non aggiungerne troppa ricotta ma solo il necessario per formare un pò di sughetto per amalgamare, il tutto, altrimenti quando si aggiungeranno le zucchine perderanno di croccantezza.
Scolare le farfalle e saltarle in padella con la ricotta e i pachino solo alla fine aggiungere le zucchine ma non lasciarle ammollare troppo. Servire subito e … aggiungere anche una spolverata di Parmigiano sopra.

A me le zucchine non piacciono poi tantissimo, ma ho scoperto da poco che in versione croccante, quindi non stracotte, riesco ad apprezzarle di più… e la menta, sicuramente, le rende più interessanti, quasi quasi da sacrificare loro la pasta, sì!
che primo invitante amo le zucchine e anche la ricotta , ne faccio molto uso, complimenti per il tuo piatto!
